A rich and hearty beef bourguignon made effortlessly in a slow cooker, perfect for family dinners and gatherings.

Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 bottle (750 ml) red wine
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 4 ounces mushrooms, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Brown the beef cubes on all sides.
  2. Transfer the browned beef to a slow cooker.
  3. Sauté the onion, carrots, and garlic in the same skillet until softened, then add to the slow cooker.
  4. Pour in the red wine and beef broth, then stir in tomato paste, thyme, bay leaf, salt, and pepper.
  5. Add the mushrooms, stirring to combine.
  6. Cover and cook on low for 480 minutes or high for 240 minutes, until the beef is tender.
  7. Remove bay leaf before serving. Garnish with chopped parsley.

Notes

For thicker sauce, mix cornstarch with water and stir it in during the last 30 minutes of cooking.
