- 2 lbs beef chuck, cut into 1-inch cubes
- 1 bottle (750 ml) red wine
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 onion, chopped
- 2 carrots, sliced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- 4 ounces mushrooms, sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Brown the beef cubes on all sides.
- Transfer the browned beef to a slow cooker.
- Sauté the onion, carrots, and garlic in the same skillet until softened, then add to the slow cooker.
- Pour in the red wine and beef broth, then stir in tomato paste, thyme, bay leaf, salt, and pepper.
- Add the mushrooms, stirring to combine.
- Cover and cook on low for 480 minutes or high for 240 minutes, until the beef is tender.
- Remove bay leaf before serving. Garnish with chopped parsley.
Notes
For thicker sauce, mix cornstarch with water and stir it in during the last 30 minutes of cooking.
