Ingredients
2 ripe bananas, mashed
2 ½ cups all-purpose flour
2 tbsp sugar
1 packet (2 ¼ tsp) instant yeast
½ tsp salt
¼ cup unsalted butter, melted
¼ cup warm milk
1 egg
½ cup brown sugar
2 tsp ground cinnamon
3 tbsp unsalted butter, softened
1 cup powdered sugar
2 tbsp cream cheese, softened
2 tbsp milk
½ tsp vanilla extract
Instructions
In a bowl, combine warm milk, sugar, and yeast. Let sit for 5 minutes until foamy.
Add mashed bananas, melted butter, egg, and salt. Mix well.
Gradually add flour until a soft dough forms. Knead for 6–8 minutes until smooth and elastic.
Cover and let rise for 1 hour or until doubled in size.
Mix brown sugar and cinnamon together in a small bowl.
Roll out the dough into a rectangle, spread softened butter on top, then sprinkle evenly with the cinnamon sugar mixture.
Roll up the dough tightly into a log. Slice into 10–12 rolls.
Place them in a greased baking dish, cover, and let rise for another 30 minutes.
Preheat oven to 350°F (175°C). Bake rolls for 20–25 minutes, until golden brown.
Whisk together powdered sugar, cream cheese, milk, and vanilla until smooth.
Spread generously over warm rolls before serving.
Notes
Use very ripe bananas for the best flavor and sweetness. Spread glaze while rolls are still warm for maximum gooeyness.
