Ingredients

6 oz strawberry-flavored gelatin (plant-based or vegetarian-friendly)

2 cups boiling water

2 cups pretzels, crushed

¼ cup sugar

8 tbsp unsalted butter, melted

8 oz cream cheese, softened

½ cup sugar

8 oz whipped topping (or whipped cream), thawed

1 lb fresh strawberries, sliced

Instructions

Preheat oven to 350°F (175°C).

Mix crushed pretzels with sugar and melted butter. Press mixture firmly into a 9×13-inch baking dish. Bake for 10 minutes, then let cool completely.

In a bowl, beat cream cheese with sugar until smooth. Fold in whipped topping. Spread evenly over the cooled pretzel crust.

Dissolve the strawberry gelatin in boiling water and allow it to cool slightly.

Stir sliced strawberries into the gelatin, then carefully pour over the cream cheese layer.

Chill in the refrigerator for at least 4 hours, or until fully set.

Notes

Spread the cream layer fully to the edges to prevent gelatin from seeping into the crust. Chill for at least 4 hours before slicing.
