A no-bake tropical cheesecake layered with creamy filling, fresh strawberries and kiwi, all set on a buttery biscuit crust and topped with a glossy fruit glaze.

Ingredients

  – 1 ½ cups digestive biscuits or graham crackers, crushed

  – ¼ cup unsalted butter, melted

  – 2 cups cream cheese, softened

  – 1 cup heavy cream

  – ½ cup granulated sugar

  – 1 tsp vanilla extract

  – 1 tbsp lemon juice

  – 1 ½ tsp gelatin powder (or agar-agar)

  – 3 tbsp water (for blooming gelatin)

  – 1 cup chopped strawberries

  – Fresh sliced kiwi

  – Whole or halved strawberries

  – 1 cup clear fruit glaze or gelatin

Instructions

  – Crush biscuits and mix with melted butter. Press into a springform pan and chill for 15–20 minutes.

  – Bloom gelatin in water, then heat until dissolved.

  – Beat cream cheese, sugar, vanilla, and lemon juice. Add heavy cream and whip until fluffy.

  – Stir in dissolved gelatin and fold in chopped strawberries.

  – Pour mixture over crust and chill for 4 hours.

  – Arrange kiwi and strawberries on top. Cover with fruit glaze and chill for 1–2 more hours.

  – Release from pan and slice with a hot knife.

Notes

 For a vegetarian version, substitute gelatin with agar-agar.
